I know that you (the original poster) didn't ask about Italy but here are a couple of comments about my experiences touring in southern Italy over the last couple of days:
If you are touring well out of season (eg before Easter and from late-September) you may find that a lot of hotels and other tourist-related businesses are closed. Tourist information offices outside the main centres may only be open in the mornings. I can't say I've had any really major problems, but I think if you're travelling well out of season it's definitely worth planning ahead and not leaving things until you are tired. Researching options before you leave has got to be a good idea.
