Yes but... 2,000km is not greater than the 2,500km that Ian H mentioned. For a mere 2,000km event I believe the minimum daily distance is 240km.
Other than that I agree with what you said.

It is and the minimum I maintained over a 2100km event last year with peak days of 280km. Amy is a much better rider than I am.

Some of the big busy roads like dual carriageways etc could be a bit of a nightmare, ok for the pros on closed roads but on open roads could be sketchy.

I started watching her YT channel last year, I watched a few then didn’t see any more until early this year when I took a liking to them. unlike Oxoman I find her sayings amusing and her videos entertaining, better than a lot of YT stuff. I recently suffered some ill health and was not very mobile for a few weeks and caught up on all her vids and also her podcast with Kyle. I’ve even got my wife watching them and she (unfortunately) has no interest in cycling but also finds them entertaining.
I wish her all the best in her challenge, she’s a very impressive lady and I’m sure she’ll be fine.

Would it be heretical of me to say that I think her videos go on a bit?

Now, I know nothing about making videos and she's a successful youtuber so it doesn't really matter what I think but I won't let that stop me ... I think they could often be chopped to half their length.

That is true of many videos on YouTube. I think one reason is that YT encourages it to provide more time to dump adverts on us!

I speed up and/or step through many videos to skip a lot of the waffle.

I often fall asleep to Amy or Itchy Boots, does that prove your point.

A lot do, I have a friend who does YT stuff. He’ll send a link, a short video he will say, and it is 40 mins! If I’m entertained then great, so length proportional to entertainment value. Most times I fast forward through or just stop watching as I am bored. But new TV I can cast you tube to it, so I might watch longer stuff now.

Thus length proportional to how good and compelling the story telling is plus what Im watching it on.

I know she is riding the transfers between stages too, but she isn't the only one riding the tour route. The le Loop Challenge takes place each year one week before the Tour and quite a few participants do all 21 stages, plus have to ride to their hotels each evening, and do it in 21 days riding, whereas Amy has and extra 9 days or so (IIRC she intends to arrive in Paris the day before the pros).

I think Amy Hudson is riding 6,300 kms, whilst the TDF is 3,500. Whatever you think of her it’s pretty impressive for someone who is relatively new to the sport.

I have no problem her monetising or making a career out of it. Her efforts are highlighting mental health issues and her chosen charity SHOUT.

By transfers, she is also riding from end of stage route to hotel and then on to start of next stage where as le Loop Challenge is just each stage with a ride to the hotel. You get driven for the transfers for the start each day, both not to be sniffed at.

Yes and because she is riding the transfers is riding almost twice the distance! So only an extra week is amazing. She also is only allowing one and a half rest days and starting extremely early every day 4:54 this morning with 190 miles today, also not staying in hotels but air bnb’s organised by herself and with only one person in support (her husband Kyle).
Chapeau to both I say!
