Full disclosure, I haven't managed to watch anything but maybe the first 5 minutes of her video when she was starting off.
How is she getting on, and is she on schedule as things stand?

She is doing well. On day 5 completed stage 4, now on the transfer route to Caen for stage 5 a TT , which she plans to ride later today also.

Another one to watch: https://ontheedge.cc/
Molly Weaver is trying to beat Nick Sanders' round the coast record.

Looking good with LEL type distance and time remaining.

Watched day 1 yesterday. Good start

Just watched day 2. Kyle leaves porridge behind and she’s not happy. Stickers drop out of pocket. Mascot goes missing.

I will watch day 3 later as I catch up

A 30 min video per stage is about right. Short enough it can be snacked on, long enough to get a sense of each stage.

I notice she uses the term "burner" to describe a tough hill. Is this a cycling expression that I've not heard of is it an Amy-ism?

I think a burner is harder than a kicker, but I could be wrong. ;)

As previously mentioned I'm not her biggest fan, however kudos goes to her actually doing it and showing it warts an all. Not only that doing it for a MH charity and she's been genuinely gobsmacked by how quickly she surpassed her target.

Not one I am familiar with, so fairly sure it is an Amy-ism - I think she uses it as in burner = leg burner.
She also has cod loins as well.

I would definitely say a burner is longer and likely harder than a kicker - a kicker for me is a shorter and likely sharper type of climb.
