Any chefs out there.........modern (simple) ideas wanted.

A relative............who loves to cook things with "a twist" has landed a job as chef at a nice pub that is NOT part of a chain.
Part of his brief is to help create a new "interesting" menu.
I thought it would be nice to suggest some ideas.
As you know.........pub meals (out of neccessity) have the same old/same old things..... e.g Gamon & egg>steak & ale pie>cod & chips>smothered chicken etc. etc. etc.
I Just wondered if there are any good ideas out there???
As an e.g. I came across Morrocan meatballs (garlic & ginger etc) with couscous or rice.

what about gammon chopped up into nice and small pieces mixed with tomato's, herbs and mushrooms served with pasta

Proper curry (no cream anywhere near it).

Burgers. Made on site with just ground beef and seasoning. Easy to make into a range if six or eight creative variants. Also gives the chance to design a burger of the month.

Risotto, I have had a nice butternut squash one. My work do a lovely butternut and mushroom pie.

Real Ale on tap, keep them coming and get him to open a kebab shop near the pub.

Well cooked fish, well cooked meat, well cooked veg and value for money...that's what I expect

Look at some of the menus from the top gastropubs and restaurants, must be plenty of ideas out there
