We always have thousands of pheasants around here. When tne shooting season starts, it is nigh on impossible not to hit at least 1. They are a hazard on the roads expecially down quiet country lanes. Lots escape the hunt, they in turn breed, and then we have more of the dam things released.
And then, of course, you have to pluck them. Or, at least, get your son to do it.

Fair enough. The flavour is more, er, developed if left for a week or two, but fresh pheasants make a delicious casserole with plenty of shallots and a slightly acidic sauce; orange juice is useful here.Yeah. Right. I think I'll pass![]()
