For gears Clarks work for me 99% of the time and I change a lot of cables on lots of bikes. The only exception have been some 10 and 11 speed bikes which have been very fussy and only cooperated with genuine Shimano SP41 gear outers and Shimano inners.
For brakes Clarks work perfectly well but if you want maximum feel and response Shimano or equivalent provides a noticeable improvement.
