The land speed record used to change regularly up to 1970, since then it has only been broken twice in 48 years.

In 1983 and then 1997, both by British teams. That is 21 years ago and no one has come close to beating it.

I presume there is no money or fame to be had anymore, and any tiny incremental gain is so costly that no one can be bothered.

It also didn't count because they only did it once, I'm pretty sure that you have to do two runs to be able to claim the record. I'm happy to be corrected if wrong.

Indeed, the FIA insist on 2 runs and take the average. Because of the cars tricycle wheel arrangement the FIA wouldn't sanction the attempt, so they didn't bother 2 runs. It might not be accepted as an official record, but the fact of the matter is they went faster than the official record that day, and were recorded as Mach 1.01. Whether they broke the actual sound barrier is open to debate - the sound barrier changes locally with temperature and pressure, and no external observer records hearing the sonic boom, but record or not they managed 731mph. Just because Guinness don't put it in the book doesn't mean they didn't actually do it - the timing data speaks for itself, and has been found to be without fault or error.
