Not familiar with sealed hubs so can't comment on that, traditionally you just undone the cones and slipped the axle out.

Regarding the headset I'd suggest trying to source an old shimano one as their stack height was very low.

Right issues sort of overcome, I managed to space it out to 122mm so cold set the remaining 4mm.
