Last question / advice pls - if I go for an 11-40 set up with my exsisting 105 set / medium size hangar - what’s the best Cassette to go for brand and cost wise ? Don’t want pro level or cheap and cheerful something comparable to what I have now re my full 11-32 105 set up ?

You can't go 11-40 with a 105 mech.

You would be surprised at how elastic the limits really are, in so many ways. I have used a 2000-era Altus mech (6-7speed) for a 12-36 9speed setup, way beyond spec. Didn't bat an eyelash. Almost everything I've ridden for years is a bodge/mullet of some sort. Especially at 9speed and under, almost anything can be made to work, and work well.

In all seriousness, hills are supposed to hurt. To me, there's no satisfaction in winching ones way up a hill at slower-than-walking pace. If you're struggling to turn the pedals in 34x32 (30rpm ~2.5mph), 34x34 isn't going to be much different - definitely not worth spaffing loads of money on overhauling your transmission, unless you're doing serious heavy-laden touring in vertiginous terrain.

Born on edge of Peak District. Rode it for years on a single speed. It’s only hurting as you are not strong enough for your gearing choice. Get stronger, it won’t hurt. Get lower gearing, it won’t hurt. Choice is yours.

its doesn't really matter as long as it Shimano/ Sram compatible & 11spd.

have a look at Airbike, they are pretty cheap and you can pick up the hanger extender you will need from them too.

Long time fan of triple front (even with 11-32 or 11-34 at the back) I've converted a standard 105 chainset to a 46/30 sub-compact by using Absolute Black oval chainrings. The 105 front mech works fine for this. I don't spin out 46-11 until something above 60kph downhill, and at my age I go out of my way to avoid hills that would require anything lower than 30-34

I've ridden most of those roads over the years , amazing place to ride. There are some killer hills mind, Froghall to the top of Ipstones Edge via Foxt was favourite sufferfest.

By far the easiest way for lower gears is to fit a grx 600 chainset 46/30 and grx front mech. The benefits are that if you run an 11/ 32 11 speed cassette the cassette isnt too gappy with huge jumps between ratios.
