Ah makes sense.....not owned a bike for 20 years plus and I was sure it used to be dead easy.

It still is dead easy! It's just done slightly differently. You've asked the question, you've been given the answers on the same day within hours, how quick was that? You now have the article, and the video clips, and you get to learn something new. Way better than 20 years ago now you have the Internet on your side.

An alternative route would be to replace the straight handlebar with trekking or butterfly handlebars to give you more riding positions available.

This might not be the appropriate route for the OP but it certainly merits being considered as an option, imho.

You can also use an angled (e.g. 17 degree) stem instead of an adjustable stem or stem riser.
I've just bought a 17° stem as part of a project to replace my handlebars and a NVO adjustable stem system that uses a sleeve instead of spacers. As I will not be cutting my steerer tube down but instead using plenty of spacers below and/or above the stem (I'm not keen on the practice of trimming the steerer tubes down), I have been agonising over the aesthetics of angling the stem up or down

If any wants to know, I'm getting rid of the NVO system purely because I cannot get a compatible stem for my new handlebars (26mm clamp - Modolo Gran Fondo). Instead of preloading with the star-fangled nut and top-cap, I will be preloading with a grub-screwed and clamped brake cable hanger near to the bottom of the spacer stack (a la Sheldon Brown stylee).
