I've done a search but can't find anything; I know there's at least 3 cycle shops that hire bikes in Bedoin. Has anyone got any contact details for these? I want to make sure they're open when we're there from Sep. 29th to Oct. 4th.

Craig at Veloventoux has a range of Dolan bikes which he rents out to clients. I would presume that if his clients are not using the bikes, he would be happy to rent them out. Give him a call/e-mail, he is a genuine bloke and from my experience he will go out of his way to help. He would also be a good point of contact for getting bikes from other sources.

There is 2 rental bike shops in Bedoin and a new one since 2008 in Malaucène center, start of the road D974, Ventoux north face (12 km from bedoin) with new rental park every year -Scott - only road bikes
haha, back from the dead... Might as well post my experience for others anyway.
I climbed Ventoux in 2009 and I used www.larouteduventoux.com which was my starting point. I got a Scott CR-1 with a 105 triple setup and a 12-27 cassette. I was less fit than I am now so I did it in 2 hrs flat spending most of the time in the granny ring biggest sprocket for the steep bits. The bike was fine and they just ask for your reach (saddle to handlebar) and your saddle height (CL of BB to saddle top) when you put your reservation in for hire. Overall a good experience, bring your own pedals/shoes. The shop is well stocked with heaps of gear if you forget things like water bottles or snacks.
