Bikeability question

My nephew will be doing his bikeability next month, and I'm lending him my MTB, as his needs some work.
With regard to saddle height on these courses; should I put it at the correct height, or so he can get both feet on the floor when sitting on the saddle?

Now I've just got to replace the cables, brakes, and pedals (my sister said that before he rides clipless she wants a video camera), and it will be ready.
