If I make a big batch, is what I dry as nice as fresh or should I make fresh each time? Maybe make dough and freeze half instead?

Home made pasta? Worth the effort.

To make lasagne when I was abroad, I HAD to make it myself. No fancy pasta makers in those days! Very satisfying to make.

You can't deep fry pasta makers, the batter does not stick to it properly

make it fresh every time - only takes 20 min.

We make quite a few things from scratch including bread (no fancy break making machine).
Don't see pasta as much difference.

OK then, taking it seriously, fresh every time. If you are going to dry it, you might as well buy dried. That aside, don't hang spaghetti where the cat can play with it.

Ah so dried fresh pasta loses the benefit?
