My wife produced a tomato flavoured meteorite a couple of years back. I took a lump hammer to it but it was indestructible. Haven't used the machine since.

I think it's to counteract the effect of the wholemeal flour on the yeast).

It's because your machine's programme has such a short proving time.

If you use the machine to mix only, then let it prove in its own time until doubled in volume, shape it and prove again then bake, you'll have a well-risen and tasty loaf.

Vitamin C (or ascorbic acid or E300) is a shortcut when you need a loaf to rise quickly.
Loafs that are allowed to prove at a normal pace do take longer but time is what helps the flavour to develop.
