If its a vibration issue, these are good.
I double wrap but more because I prefer a thicker diameter of "stuff"
"wrist discomfort" sounds like a position issue though or something as simple as straight / locked elbows whilst riding
I use either lizard skin 3.2mm tape, or zipp cx tape on my cx bikes for comfort. Zipp service course tape is also pretty good as it has a soft rubber feel
The person I'm doing it for has had a rheumatoid viral infection and has joint issues, it's a new to them bike so we've yet to get to the set up , but yes it's an important thing to get right.Worth checking that it's vibration causing the issue and not bar position putting too much weight on the wrist

1. Is it your bike set up that is the problem?
2. Consider old inner tubes as bar tape.
