Hi and TIA
Can I use a 12T 5800 11s sprocket to replace the missing sprocket of the same size (seems to fit perfectly) on the 4600 10sp cassette?

Does anyone have/where can I get the plastic cassette sprocket spacers? I have the sprockets and lock ring for both cassettes (depending on Q1 answer) but no spacers?

Yes, but since the spacing to the next smallest will be ever so slightly less, judicious use of the limit screw and a tiny bit of tension in the cable when in the 12t (as opposed to slack) will sort that.
