I have been looking at a 2016 model and if anyone can tell me what a 56cm would suit for height wise, im 180cm tall but don't know if they come out bigger as in reality its a 58cm or not or i should go for a 54cm, any help please.

If you have any doubt, err on the side of a bigger frame as it's less restricting if you need to make changes to finishing components. So I'd go for 56.

I’d actually say it’s better to get smaller as you can increase size with components but not make a frame smaller

However, if spending more than a few hundred go try them both out properly

Phone a Cervelo retailer like Sigma sport for advice if you really can’t test ride (which would be ill advised for what is presumably a bike costing more than £200)

Presume you’ve compared all the measurements and angles fully against your current bike

Do you mean 56cm vs 54 and not 58 as you’ve typed?

I am 176cm, i ride a 54cm r5, i had to use a 90cm stem to give me a perfect fit. But you need to get to a descent shop where you can at least sit on one.
