  • 250g Mince, drained
  • 400g Tin of kidney beans
  • 400g Tin of tomatoes
  • 200g Onion
  • 30g Tomato puree
  • 7.5cc Worcester sauce
  • 20g Flour
  • 2 Fresh chillies
  • 3 Cloves of garlic
  • 5cc Paprika
  • 5cc Cumin
  • 5cc Ground coriander
  • 3cc Onion granules
  • 2cc Sugar
  • 2cc Salt
  • 1.25cc Cayenne pepper
  • 1.25cc Oregano
  • 1.25cc Marjoram
  • 0.5cc Pepper

I start most minced beef /beef stew dishes with a mirepoix of finely diced carrots, celery and onions in equal measure sometimes leek too. A great base to build from.
Brown the beef off with some crushed garlic, add to the mirepoix with some beef /chicken stock.
Bay leaf and thyme. Tomato paste, Worcestershire sauce, dash of soy sauce. Cooked low and slow.

Now you can go any direction you choose.

Chilli, bolognese, shepherd's pie......

My new found way of doing mushrooms. Thick slices, dry fried in the pan large enough so they all lay flat. Brown off then turn them over. Last minute splash in some soy sauce toss them around then put them to whatever use you had in mind.
