Slightly off topic but do people put carrot and celery in?

I start most minced beef /beef stew dishes with a mirepoix of finely diced carrots, celery and onions in equal measure sometimes leek too. A great base to build from.
Brown the beef off with some crushed garlic, add to the mirepoix with some beef /chicken stock.
Bay leaf and thyme. Tomato paste, Worcestershire sauce, dash of soy sauce. Cooked low and slow.

Now you can go any direction you choose.

Chilli, bolognese, shepherd's pie......

I will take you up on that if I may.

Sure. Either I can post some in an envelope or you're in the same neck of the woods so if you want a bag full, just let me know. They'll need drying, but they're tough things and almost impossible not to store "properly".
