Yup! The Mexicans are using it a lot as well.. Aparently it makes meat and poultry really succulent!

Ah, the Mexicans! I wouldn't regard that as a recommendation for good taste, after all this is the country that serves up turkey with chocolate and chilli sauce. It's called mole sauce and having tasted it once I think it could be improved by the addition of freshly grated real moles.......and perhaps half a bottle of Broon.

Never even implied you should. Having said that, England wasn't exactly famous for its culinary masterpieces either (until 10 or so years ago at least).

Cooking with beer sounds positively civilised compared to cooking with Cola Cola. Searching for an alternative to turkey at Christmas, I recently discovered this bizarre dish....

I've eaten beef which had been marinaded in coke - prepared by a cook from the US. it's pretty acidic, so a reasonably plausible choice as a tenderizing agent. Can't remember what it tasted like to be honest, but the rather young Orval we drank with it was excellent.

I didn't know about Den Dijver but I tried to book a table at Erasmus when I was in Bruges a couple of years ago. Unfortunately it was closed for refurbishment.

Mind you, plenty of other restaurants in Bruges use beer for cooking - I had an eel in beer stew in one restaurant. Delicious!

It's called mole sauce

"Mole" just means "sauce" (as in guacamole), so "mole sauce" is a tautology. The dish you're referring to is mole poblano and made well, it's excellent!

Just found a recipe for chilli chicken liver in lager on the interweb. I'll give it a try and report back!

I stand corrected! The one I had can't have been made well because it was truly sickening.

I can imagine. I can't claim to be an expert on Mexican cooking, btw, but there's a decent Mexican cafe near where I live. They do a nice version of mole poblano with duck breast instead of turkey.

Nigella (and hence my MIL) does that with gammon. It's nice, but the Coke flavour isn't really detectable.

To the beer, how about Guinness or lager-flavoured ice cream (on two different visits to these guys)?
