I'll have go, saw these last year at Saltaire, wonderful.
Forgot, saw 2 others there too, in fact I saw a lot of C&W in Saltaire, Malcolm Holcombe is very raw and was excellent, worth looking up some Youtube clips, but this woman was just jaw dropping, what a voice!
...
There's loads of good stuff but tons of s***e too...
My personal favourite is Johnny Paycheck's 60s Little Darlin' recordings but drinking, suicide, murder, world destruction and mental illness aren't everyone's cup of tea, takes all sorts!!!
Impossible to narrow it down but you can't go wrong with these, some modern, some trad...
Hank Williams
George Jones
Faron Young
Dale Watson
Dwight Yoakam
If you want bluegrass try
Flatt and Scruggs
Party Loveless - Mountain Soul
Carl Jackson/John Starling - Spring Training
The Dillards - Almost Live
Seldom Scene - the anniversary album is a good one.

grab yourself a copy of the Oh Brother Where Art Thou soundtrack... that's got some good bluegrass type stuff on it.
Plenty worse music about!
I used one of the many Lomax tracks for this timelapse I made:

As an aside, that song is v similar in theme to "Seven Drunken Nights"
