Because you don't put enough duck inside each one to begin with!!!!!!!!!!!!!!!!!!!!!!!
We do a very tasty line in pancakes stuffed with chilli beans. And because yours truly makes the pancakes, there are always enough. You duck-eaters (and other carnivores) will perhaps scoff at this veggie dish - but would nonetheless scoff the lot if I set it before you!
