We used a company years ago for a trip from Vienna to Budapest. They provided bikes, maps, booked accommodation and did luggage transfer. It wasn't guided, you rode at your own pace, and chose if you wished to ride in company or not.
We were quite new to cycling then and had never done any touring. The bikes weren't very good, I'd provided my own gel saddle cover, my then husband was in agony every day!
Other than that, I couldn't fault it. The organisation was fab, the accomodation was great, we had no problems with the luggage transfers.
The only thing was the cost. My estimate was that we could have done it independantly for half the price.
