Wheels make a massive difference mind you.

but Unfortunately, this is the issue with Canyon (and Rose) unless you live in Germany or have friends with the self same bike

If the only two bikes available, I'd have to take the first regardless

For a bit more info....

Got a 2013 giant defy 1 which has been great about 2500miles and will be this year winter bike!

Mate has a ultimate cf which he got as a frameset which looks great

I'd go Defy or Felt for that money. Bling is nice, but chrome don't get you home, and Giant and Felt dealers will have demonstrators you can ride.

I wouldn't pay £500 on a car I couldn't test drive, and certainly wouldn't shell out four times that on a bike I couldn't cock my leg over before parting with the folding.

The older I get, the faster I used to be ...
The gearing on the bikes is different, the Endurance has a compact, the UIltimate, standard double. I would go for the Ultimate IF they it was possible to fit a compact* and also a wider range cassette. I prefer the wheels on the Ultimate, and it's a lighter bike. The grey Canyon is a very classy bike 'in the metal'. (*Canyon weren't very amenable to this sort of change when I was looking. Rose were much more accomodating, which is why I bought A Rose Xeon CRS 3000. Worth contacting Canyon if you wanted more information).
Edit - that should be 'in the Carbon'
