I am also looking to upgrade the stock wheels on my 2014 Defy 1 and am leaning towards the Campagnolo Zonda's. I'm hoping to lighten up the bike a bit.

There is a thread somewhere, where Zonda's are discussed at length.

Seem to be quality at a good price.

One question I have is whether the Shimano freehub on the Zonda has a different sound from the campagnolo version.

That's a good question. The Shimano version is significantly louder than my stock wheels. Comes in handy in human traffic though.
