I had exactly the same conundrum a few weeks ago. I ended up with a Look 566 over Giant, Bianchi, Cannondale and Cervelo. I'm not one to suggest that the Look is for you - only that I was surprised how out of line my preconceptions were with what actually felt right on the road. I really fancied being seen arynd tyn on a Cervelo or a red Bianchi. There goes a man of taste and distinction, dead effin' elegant an' all....However the one for me was the Look. It was the only one that felt right all the time - some bikes felt faster, some stopped better, but I wanted to enjoy being on the bike not shouting "Ey up our kid another 15 seconds off me PB! Get on!...." Well not too much.
So my advice is, go and ride loads and loads and loads of bikes. Torment the shops until you whittle it down to The One. You will know it when you find it. Eventually.
