I volunteer for my local branch of Cats Protection - I run the branch website and photograph most of the cats that come in looking for homes. Things I also do are bake cakes and make preserves for our fundraisers, provide raffle prizes and specials for our annual cat show and buy up any cat food I see on yellow sticker for the fosters.
Certainly as far as CP is concerned, if you want to help the cats directly, it is far better to donate money / food / skills to your local branch than through the channels at national level; other than neutering grants and publicity material, each branch is a financially independent entity.
Took a cat carrier and some spare cat food to a Cats Protection shop once. Being clever, I put the cat food in the cat carrier. I was only half way between the car and the shop when the volunteers had dashed out of the shop to tell me that they can't take cats. And were very relieved to find that it wasn't a cat that was making the carrier rather heavy!
