thats the strange thing she left the skins on and the tomatoes were chopped i always thought it was more like a sweet chutney with bits of the green tomatoes but it was a jam i remember watching her make it and helping her chop the toms i remember the sugar going in and a drop of water but i cant remember what else and when iv tried to make it its just not quite the same as she used to make.Sounds interesting... I should think you'd probably skin the tomatoes (by covering briefly in boiling water, then draining and peeling), then just... make jam, in the traditional way (ie 1lb sugar per 1lb (chopped) fruit, perhaps with a squeeze of lemon juice. I would have thought it would go well with a bit of ginger too. Do you remember if she left the seeds in?
I've made green tomato chutney of course, which is much the same thing but with added vinegar and spices. There is a big Shaker tradition of desserts based on ripe tomatoes too.
ahh now there is the million dollar question personally for me jam on bottom then clotted cream and if im lucky a bit of fruit on topabove or below is the question though....
