If you really want to get rid of IE, I'd say go for it. I've not had a problem using Chrome for a while now. When it was first released it was little more than an open beta test (the proper kind, not the perpetual kind) so plenty of sites displayed problems like summerdays outlines above.
Now Chrome passes the
Acid3 web standards test, Firefox almost does whereas IE8 doesn't even get close. Of course that doesn't really indicate how websites will actually function, because a fair number don't follow web standards anyway, and are built around looking pretty in IE, which is notorious for doing whatever the chuff it wants.
That said, I've been using Chrome pretty much exclusively for over a year now and not had a problem, except when I'm at work where for some unknown reason we're locked into IE6.
