Ice cream has a half-life you could measure with a stopwatch at DoctorTowers.
To return to the OP, I do have a freezer cull every so often. If it's been there for too long, I either cook it or bin it.

02GF74 is spot on - it still goes off. Freezer life tends to be a maximum of 6 months.
In my youth I pushed some pate past its date (I know, I know, but I was young and naive!) - prompted 1 week off work.
Frozen meat is less risky than pate, but toxins will build up, and smell or taste is not always a reliable indicator as to whether food has gone off.
Personally I would bin it.

Freezer life is determined more by dehydration and slow chemical process that continue like oxidation of fats (rancidity). Whilst not 100% of water is frozen in a food product at -18, it's enough to make bacteria, yeasts and moulds hibernate so they're not going to be an issue unless they were there in high numbers or their toxins were there before they were frozen.
Quick defrosting followed by consumption thereafter is the trick and everything should be fine.
Food can be stored frozen for years and years and still be safe ... maybe no longer palatable, but still safe!
 
It was only after I'd eaten a tin of Pilchards I realised it was about 4 years past its best before date; I had a proper jippy tummy for a couple of days. I'm not doing that again.
 
Last year I defrosted some old turkey which had been in the bottom of the freezer for at least 10 years. I tried some, but it had no flavour or real texture, so threw the rest away.

Slightly O/T, I reckon anyone wanting to cryogenically freeze their body wants their head examined. Tthere'll be nothing worth defrosting.
