I know next to nothing about ebikes, and our son who is recovering from long covid has asked me to buy him one with flat bars.

He's 5'10", will be cycling gently on lanes and canal towpaths while he builds up his stamina.

Budget around £1k.

Any tips?

Alternatively you could convert an existing bike if he has one or good used hybrid on Gumtree etc. Loads cheaper.
You can choose from with a bafang type BB drive or wheel type, bit cheaper, assuming you're a bit handy
Swytch are good albeit a bit more expensive than a Chinese kit but are UK based so good if you have any probs. Battery just clips on the bars.

A Carrera is a fair shout for the budget, and has the benefit of being available from a local shop.

As regards an internet purchase, woosh are about as good as any.

The bikes are in stock at their Southend premises, and they are known to be reliable to deal with.

In other words, if they tell you the bike is available, it is.

Wide choice of models for £1,000 or just over.

The Rambletta at £999 is excellent value.

It runs on 20" balloon tyres, and the compact frame makes it easier to handle than a traditional diamond frame/big wheel bike.
