Tool & spares kit sounds a bit light; gear & brake cable, cable ties, tape, spoke key (if not on multi-tool), tyre boot, lube.

Satchets of salt, pepper, mustard, sauce etc. are handy and can be had for free at your local Wetherspoons or similar.

The Outer Hebrides don't have a nice cafe on every corner. Pubs/Hotels are pretty thinly spread too. If you set off with no breakfast, you could be pretty hungry by the time you get the chance to buy a meal.

I'll make me own breakfast before I set off, and just stop at cafes / pubs as and when I see em.
