Simple pan fry and serve over new potatoes and veg (samphire if there is a Waitrose near by) with a lemon butter sauce.

the thais do a crispy whole bass that is superb although it needs thai chillies etc. how big is the fish and have you got a steamer? its quite a hardy meat for a delicate fish, but tastes good with little messing. my recipe is descale it, cut its tum open and scoop out the innards, then steam it with plenty of fresh strips of ginger and garlic laid over its back. if your steamer is small, take off the head and or tail first. it will need about 10 minutes steaming with the water bubbling away, then another 5 to ten minutes off the heat while the waters still hot. covered all the way. once off the heat, splash a bit of dark soy over and around the beast. if youre handy with chopsticks the skin will then come away easily enough and you can flake/pick away at the delicious flesh. if not, careful fork work will do.

you can eat it just like that or isolate the meat and whack that in with some white rice and a sprinkle of chilli.

Waitrose!!!!!! This is North Wales. One was built in Anglesey when Prince William was posted there, but otherwise it's the Spar and Bargain Booze, which also sells crisps and three different types of coated peanuts.

Well then, if it's North Wales than the bloody stuff grows wild, get out there and pick it! (Actually, it's November, the season is very very over) :thumbsup:

And, I'm in Llangollen, so think of the food miles. Flying Monkey is doing the calculation already. I need local stuff. The Spar has pork scratchings in its new healthy eating range. Are they any good with sea bass?

Wrap it in tin foil and stick it in the dishwasher.

I'm the dishwasher. There may be a few rich folks in Cardiff with one of these new fangled electric ones, but round here it's all manual.

Don't start with those new fangled machines, Patrick will be along in a bit to boast how they still do the washing up in the horse trough outside, that's when they don't eat off a bread trencher.

Simply rub some butter garlic and parsley into the inside of it, wrap in tinfoil and stick in the oven. Battering and deep frying any fish just seems wrong to me, why add all that greasy batter and spoil a healthy meal.

Wrap it in tinfoil and sit it on top of the TV. It'll be ready just in time for News at Ten. You'll never have tasted fish so tender and delicate.

I've got some oil from a large drum outside the Indian takeaway - it's a bit dark and smells peculiar, but I'm sure it will be alright. Foil? Not used much in this neck of the woods, and I'm not driving 60 miles to Waitrose, so I've improvised with grease proof paper from last night's chips and a KFC container. We're getting there.

Now for the vegetables...................
