I like Carlos Nuñez (and I have that album), but my favorite for Galician Celtic music and in particular "Muñeiras Gallegas" (Galician Jigs), is a Galician group called Milladoiro. I've watched this particular concert several times:

Surprised no-one has mentioned Manu Chao. Far from being a 'traditional' Spanish musician, he's more a cocktail of different styles: punk, rock, reggae with a big dose of Spanish anarchistic socialism in his lyrics.

I learnt Spanish very quickly some years ago when I had a Spanish girlfriend from Pontevedra who didn't speak any English. However, try as I might, I never really managed to acquire an authentic Spanish accent. For me, the perfect accent that I aspired to (but failed miserably) was that of a favorite Spanish singer (from the Basque region) called Patxi Andión.
