Full size wheel rear trailer

I've often thought about getting a trailer but stability issues when hurtling downhill have always put me off. Today a rider was coming towards me, I thought he was on a tandem at first, then thought it was an empty tag-a-long, but he flew a past with a full size (700c) 3rd wheel with frame & panniers attached. I never knew that such things existed.

Anybody have any experience of them?

No personal experience, but then again I'm too slow at descending to experience any problems with my cheapo single wheel BOB knock off trailer.

Although I could easily see an angle grinder, a rear triangle off a mountain bike, and some scrap steel fabbing a rough equivalent together over a free weekend
Edit: Make that 2 rear triangles, as I may need a second set of dropouts to use to attach in front.
Make that one from chain stays and seat tube.

One wheeled trailers of any wheel size have better tracking than 2-wheelers.
2-wheelers are better at hauling big, heavy loads.
The hitch location also affects performance.

I've had a 2 wheel trailer (only a cheap basic one) for years and stability at speed is not an issue (downhill on a section of dual carriageway between Ashbourne and Derby I was keeping up with the cars in the 'slow lane' so @45mph) However stopping would have been a bit of a problem. (I'd gone up that way so I knew there were no turnings/sideroads on a long downhill section)
