I was hoping to find the instructions that I followed to resurrect my psychotic Garmin Oregon but I was unsuccessful.

Both machines have nothing in the memory so happy not full .

I refer you to the manual. Your Edge start / stop of timer is no different to other Edges. Perhaps you are not as familiar with its functions as you think?

Yes it shows a good signal on the chart and gives current speed

Speed doesn’t require to have started the timer, but the latter would. Good we’ve ruled that out. Now as for average speed, are you saying it is showing zero on the screen for that field?

Tried another couple of things yesterday and still both not registering miles or average speed.
Contacted a Garmin repair company and asked them and they said a battery replacement might sort it out but couldn't guarantee it so not on option, might go to local decathlon and get a new GPS

That's what it shows
