Greg Lemond Etape upgrade advice

Hi there. I have a 2005 Greg Lemond Etape and I would like some advice on upgrading gears and wheels. I love the bike but find now that I never use the granny wheel but if I want to be serious about improving the bike's performance think I should upgrade wheels as well.
