There is just as much nutrition in the stalk (and flavour) as there is in the flower head (which is what it is).

My sister came to stay and commented on the fact that I was chopping up the stalk when preparing broccoli. She was amazed that I was doing it and I was was amazed that she doesn't when she has broccoli back home!

Nanny state in action ... They reduced the size of them under government pressure to try to get us to eat less junk. All we do is eat 2 instead, which is more chocolate than 1 old bar used to be!
