I've got 6 at the moment...
Takamine EG332c 6 string electro-acoustic - my main guitar for years  I've gigged it, busked with it, written loads of songs with it...and it will be buried with me (in it's shiny Hiscox case).
Takamine EG523SC-12 string electro acoustic - big jumbo 12-string and great fun to play
Martin Backpacker - travel guitar, no bass to speak of but cuts through nicely and doubles as a cricket bat
Squier Classic Vibe 50s Stratocaster - I sold all my electric guitars off a few years ago and this was a present to myself when I realised I'd made a big mistake!
Gremlin A-style mandolin - I used to play in a folk band & it's always good for a bit of REM's Losing My Religion
Peavey 4 string bass - a cheap 90's bass which I haven't seen for ages but was handy for recording on my old 4-track

Amongst the guitars I wish I'd kept are...
Sunn Mustang - red strat copy....my first guitar
Fender American Vintage 52 Reissue Telecaster - used to play this through a Fender Blues Junior valve amp....lovely!
Gibson SG Standard - my one and only Gibson
Lowden O25c - best guitar I've ever played

I Wish I had the know how to build up something old into something fantastic, like your strat. I suspect I would really enjoy that.
All you really need is a soldering iron. I started with a Strat my brother found in a skip (the one pictured above, in fact) with knackered electrics. But you should be able to pick up something like a Squier Affinity Strat for under fifty quid. Then have a look around the web - I got most of my ideas by googling "Strat Wiring Mods" - and off you go. Soldering is easy with a bit of practise!

It's second habd but looks new. The amp I am not sure it's not a main stream one.

Have a go, if you can try first, you can always upgrade the amp later etc. Something to get you going without spending too much is always good!

(Although, I must say I've never played an Epiphone, just going on my own experience of cheap guitars.)

First guitar I bought (Kasuga from 1980/81), not particularly comfortable to play, but I put into open tunings now and again for something different.

Tried a classical, but the music didn't do it for me so this got moved on Admira somethingorother...

No need for an intro to this...

Taylor 314

This was a 40th birthday present. Spent most of it's life in the case out of the way of the dogs, so sold it on :-( Fylde Gordon Gitrap model.

Of the above, still got the Taylor, the Kasuga and the Tele.

Finally a little tune on the Taylor (my one and only ever recording into a Zoom H2).

Been for a play and bought it;

The amp is actually 20 watt and to my untrained ears sounds fine. Has loads of twiddly knobs I have no idea what to do with! Friend knows a guitar teacher so I shall have some lessons now I think!

There's quite a bit of tuition available on the internet. A couple of weeks after buying the guitar my "play money" was reduced to zero so I needed something free. I still go back to Justin Sandercoe's website every now and then The beginner lessons are excellent. Still, having someone watch as you play is a huge help.
