Installing it and getting going is easier on Windows, unless you are already a Linux user.
You can download it and run it for a trial period to how you get on.

I use similar functionality inside the house but rather than go for a "Media Server" I just use a NAS with file sharing and the player apps can access the server. I use a Synology NAS enabled SMB sharing (on the LAN) and use InFuse player to access the files (the same player will play through "Media Servers like Jellyfin and Plex but for me the file sharing works fine.
For me the benefit of a NAS it is also provides a backup device (for backup systems as well as manual duplicate copies of important files).
I suspect that if you want remote access then your mobile device would need to know how to find your "server" on the internet which means either a fixed IP (which most ISP will charge you for) of a DDNS (Dynamic DNS). Not complex but also once your media server is accessible from the internet you have security considerations and there are a lot of attackers out there (my personal website is under continual attack these days biggest source of attacks is from USA sources not China).

I have all my music on a NAS, easily accessible, plus it stores all my photos and videos, again easily accessed and viewable on TV, tablet, phone.

The bandwidth required for music is in kilobytes/s. I very much doubt they would notice or care.

Why not just stick all your music on your phone? It is not like it would get anywhere near the memory limits.
My music folder is 324 Gb. My photos library is 95 Gb. My videos library is 641 Gb. That's over 1 Tb.
These things can add up. 😉

What format is it stored in? I mean, that is approx 463 full albums at CD quality.

And??? I have roughly 650 CDs, a couple of hundred vinyl records copied and countless downloads.
A quick check and I have 28,849 tracks.

My phone's 128GB, non expandable. It's nowhere near enough. Possibly if I re-encoded everything to 128kbps 🤷♂️

That's where things might get more complicated than it's worth. But if it's easily accessible so I can transfer a few albums at a time to my phone, that seems like a reasonable compromise.

At that sampling ratio, you would have approx 32,000 songs in 128 Gb. Just how many songs do you have?

They're not all at that sampling rate and I'd rather not have to re-encode them all to sound worse. Plus I have other things on my phone. Apps and stuff. You're gonna have to trust me, I can't fit all my music on my phone.

One thing worried me about a NAS, which I have somewhat looked into. As I understand it the disc handling for the various RAID options are proprietary. This is fine if disc fails, in which case you bung in anothet and it all synchs up and all is well. Problem is if the box itself goes wrong, you can't necessarily just bung your discs in another NAS unit. With this in mind a disc in my PC made shareable on my LAN, with conventional USB backups would be a safer bet

I think I have about 70GB of music, plus a load more which I need to rip, plus a load which I've been listening to on subscription so should really buy, likely on CD if available.
