Well eat in proper restaurants then, rather than pub chains. I've never had any issues finding a decent steak, although when we eat out I tend to order food that we can't or don't cook ourselves, so would seldom have steak.

The answer to the original question is........Over an open wood fire.

Depends on the cut. But agree that it's increasingly difficult to find places that cook it properly. Cubester worked at a wholesale butcher before he went to uni, so we had a few good steaks to practise on. There's also a good supply of free-range venison available chez-Cube so I'm honing my skillz with the skillet and griddle. Roe backstrap seared all over in a pan so hot it's making funny noises, then rested in foil for fifteen minutes is my fave. Or hanger steak rubbed in olive oil and salt, then chargrilled as hard as you can til it's medium rare, with a fantastic crust and a very pink inside.

depends where I am having it and the provenence of the meat.

one place in bristol I get them to do it Rare as thats how it should be .

one place in St Austell I ask for medium rare but more on the rare side. as thats how they cook it for it to be right,

its not poncy .


wen i buy meat and cook my self it gets left to come to room temp then waved in the direction of the smoking hot griddle pan
 
Our local butcher moved his counter back and turned the front of the store into a restaurant. If you ordered steak, he'd come out with his knife, and cut the steak for you and supervise it's cooking. Delicious and and not even expensive (especially as they were BYO).

Sadly, he died a butcher's death, went to bed feeling a bit poorly and had a massive coronary. Vale, Alan.

I would be rare on that chart.
I often order rare and it will be more like a medium, i guess many restuarants get a lot of push back on medium rare with people expecting it to look medium well.

The pics are good for helping clear up the definitions but the judgemental comments are bollox. A good steak is one cooked the way you like it.
