Mine too! I spent a few months in Turkey and the things they do with and aubergines are amazing. I do various vege versions as well. I like the idea of saffron yogurt mentioned by CanucksTraveller, might give that a go. Basically you need a dressing with Middle Eastern spices or go down the Mediterranean route.
