Just can't get enough of 'em:

Dry fried on a hotplate and eaten with a burger or bacon in a bun.

Poached on a crumpet with grilled cheese over the top.

In a nice sloppy omelette.

Boiled with buttered toast.

Boiled then mashed with sardines, black pepper and mayo and used as a sandwich filling.

Boiled, sliced and served in mayonnaise or Marie Rose sauce.

Boiled and served in curry sauce.

Boiled and sliced into a ham salad sandwich, such as I'm eating now.

....and best of all, scrambled, left a little sloppy and served on granary toast with butter.

Food of the Gods.

I do like them - try not to eat too many though.

Got the hang of omlets last year after watching the chef's, whilst in Turkey, cook them for breakfast.

Fried egg on a fresh chapatti rolled up with a sprinkling of salt - my favourite and usual breakfast in India and Nepal. Yum :tongue:

Sadly I can never recreate it at home :sad:

I hate cold cooked egg in any form.

I had a dream last night where I asked a friend to buy a sandwich for me, I told him I hated egg and cress, and he came back with a trolley full of egg and cress sandwiches. Then he stood there laughing while I screamed at him in rage, so I took all the sandwiches out of the trolley and stamped them into a big eggy mush, then my hands turned into spades and I started picking up the eggy mush and pelting him with it, he started eating it all.

We rode past the freest free range hens that I've ever seen on last Sunday's forum ride. We were riding along the south side of Longridge Fell and saw a field full of them, but loads of them were also roaming about in the trees next to the field. (One or two had made a bid for freedom and were wandering about in the road!)

It reminded me that I haven't bought eggs for a long time so I picked up a box of 6 extra large free range eggs at the local market about an hour ago. It's mushroom omelette and salad for me tonight! :tongue:

Go on then, what's the hang? I've never been very confident with omelettes.

Actually, same here. I'll probably end up with scrambled egg with mushrooms in unless somebody answers your question (or I can be bothered to look up a recipe).

eggs are indeed the food of the gods, boiled, fried, poached, baked, scrambled or as an omelette no better food.

at home i like to do 2 rounds of toast, dark with brown sauce on. then drop a fried egg on each. bliss.
when out camping brekkie consists of chopped chorizo fried in a pan until crispy, then drop in an egg and scramble together, throw into a pitta bread or chappatti and you'll go for DAYS on that. (recipe thanks to Calibanzwei)

my mum likes to do bashed egg in a cup, soft boiled egg dropped into a cup with some butter and smushed about. dip your toast into it. great for kids :biggrin:

Eggs are brilliant. Packed with protein, and not as bad for you as people make out. You can eat a couple every day without any bother, although I tend to save them for weekend treats.

I have really got into duck eggs recently. They have a bigger yolk (which is obviously the best bit) and a lovely flavour.
Poached is my preferred method of cooking them.

Spanish omelette. It's like egg cake, and I'm about to make one.

Slowly caramelised sliced onions with a splash of balsamic. Add sliced , parboiled new spuds to onions and fry. Chuck in some sort of steamed green veg, and cherry tomatoes. Put in sprung type cake tin and tip in six whisked-up eggs with seasoning, parsley and garlic if you want to go all properly foreign, like. Bake in oven, and brown off under grill.

Like revenge, it's a dish best served cold.
