Eggs are indeed wonderful but it seems you have only scratched the surface of their possibilities. Don't forget: custard, mayonnaise, hollandaise (bearnaise etc.), eggs benedict, meringue, souffle, zabaglione... oh and you can pickle and preserve them too.
