I can understand people commuting or going to the pub on Bromptons, but long distance hilly rides ...

If you can only have one bike, fair enough, but I think I would always want a more conventional bike for the harder rides.
Eh? I had only one bike most of the time and it had to fold...hence the B.

Flipping heck ... That is what I said!!!!
unless I needed a folding bike to take on public transport or for storing safely where I was going to.

It is also what you are saying, or you wouldn't be riding around on full-sized bikes now and looking to buy another one.

Everybody can ride what they like or what they have, where they like, why they like.

I will stick to full-sized conventional road bikes, but quite fancy having one with S&S couplings so it could be broken down into something smaller. You can get backpack bags for them.

What is the attraction of a steel bike?

Know very little about them!
I think it's a number of factors:

Long ago in the pre-aluminium age the best bikes were made from 'fancy' steel tubes from Reynolds, Columbus, Vitus of which Reynolds 531 was the one most of us could afford and it made lovely (but not stiff) bikes to ride. Each was lovingly hand crafted and painted, lugwork could be plain or fancy etc. Aluminium came along and was lighter, stiffer and cheaper thanks to being mass-producable. So an element of the whole 'steel' thing is a certain nostalgia for bikes that we used to dream of.

Another element I've already alluded too is that steel frames are made by a man with a frame jig and a welding torch, an artisan if you like, hand-made. Paintjobs can vary greatly for the same frame, lugwork differs, and can be lined etc. OK, many frames were hand made on a production line, but many like say Pearsons in Sutton had a guy out the back making them any way he fancied, so hanging in the shop was a row of distinctly individual frames. You could have a custom job made almost anywhere.

Also, it was quite a cottage industry, some became more mass-market than others, but a lot of old frame-makers were very local concerns.

Finally, steel bikes all have a certain ride quality that is different to Aluminium, Titanium or Carbon. It's smooth, springy, mildly shock-absorbing, it's quiet too unlike Aluminium and Carbon which can be clattery over rough ground. You either like it or you don't, but it's very pleasant to ride.

Finally, steel bikes last for donkeys years. They can be endlessly restored, modified and repaired (for a cost) and can be a joy for ever!

Try one!

Fing is, stuff with a fancy exotic foreign name sounds all ooooh ahh etc. But is it actually better than anything that you can get built on these shores? As ^sez also, it's down to you at the end of the day boo. It's your cash.

... wash your mouth out ! 'Course it's better - it's more shiny innit.
And anyway, i want one !

Fixed wheel fanatic.
I love the ride of a steel bike.
No one has picked up on your comment about fixed. If you went fixed you'd save shed loads of cash on a group set, more to spend on the frame!
The Colnago would be my choice. There's a guy who TT's a Master at our local club 10, 'tis a thing of beauty.

Lot of good suggestions upthread. To throw another Italian option into the mix: Legend. Marco Bertoletti's been building frames for 39 years in all, setting up his own firm in 1989 (supplying Passoni and Viner among others, and pros have used his frames with sponsor paintjobs), and since he launched the Legend brand he's had a lot of very positive reviews from press & public. All made to measure, custom paint, steel options starting from £1700.
