Barring 'somewhere else' you can always just drop the miles to compensate and pick a route which is interesting enough so no big days are needed to keep you occupied. Me and a mate did a loop round Exmoor last year, it was pretty hilly and neither of us were bike fit, but - lazy sods we are - we just did 20-30 miles a day and it was no bother. 20 miles a day around the Pembrokeshire coast?

I remember from my youth getting there for a walking holiday and my dad deciding 'its too flat for walking' so we went back to North Wales. His definition of flat may vary differ to yours though!

Loch and Glens North is a nice ride. With reference to the OP in relation to Wales those nice folk at Sustrans have put together Easy Rides in Wales so you could piece together some of the easier parts. Lon Las isn't that tough, and some of the stupidly difficult off-road sections can easily be bypassed and the challenges it does offer would be splendid for a spot of Father-Son bonding.
