In order of acquisition:
Claude Butler Odyssey; This was off the peg until it was no longer my only bike. Now in process of rebuild. The rack was recycled to be used on Nemesis.
Ridgeback Nemesis; Purchased as low maintenance replacement for Odyssey, shop fitted rack & mudguards at time of sale. Replaced rack with one from Odyssey as I did not get on with the one that was fitted. Built new front wheel with hub dynamo + installed front & rears lights to fork crown and rear mudguard. I acquired another Nemesis that had been in a crash and have used extensively for spares. New frame required after failure at BB shell. Recently replaced the single cranks/chainring as the Nexus one had worn down.
Cannondale T2000; Purchased second-hand from The Bike Station (http://www.thebikestation.org.uk/) so no idea what the version on the peg was like. Replaced tyres and fitted mudguards and computer. RH shifter jammed, so needed to replace both (as they come in a set) and replaced all cables at the same time.
Pearson Touche; Mudguards and upgraded tyres fitted as options at purchase. I have built new wheels on Halo Aerorage rim, but this is probably the closest to being off the peg.
Nemesis Fixie; Built up on the donated frame. New fork, built wheels on new hubs & rims. Only has a front brake using the LH Nexus lever from the original bike, but to V brakes (donated from Odyssey) rather than roller brakes. No rear brake as frame will only accommodate roller brakes at rear & this is not an option on any fixed hub I can find.

My mountain bike is entirely hand-built by me out of bits of older bikes (mostly a Kona Hei Hei) on a Global Th1.5 titanium frame, which replaced a Th1.0. The next mod, when I can afford it, will be a compact hollowtech type crankset with cartridge bearings to replace the disppointing Royce Ti BB I have on it.

My Roadie and MTB were both off the peg.
But very little of the original bits are left on my MTB now and on my roadie, which I got 15 months ago, I've changed the pedals, saddle, chain, sprocket and wheels.

I have a different saddle and seatpost, the chainset is not the same as the one I got, it's exactly the same apart from 5mm difference. tyres are different. break peads, that's about it.

Bought a new bike last Saturday. Already it has new pedals, bars and brake levers. The abomination masquerading as a saddle will be replaced by a Brooks on next pay day.
The item I wheel out of the LBS is only a starting point and demands moulding and personalisation before it becomes my bike. No bike ever stays 'off-the-peg'.

My commuter is the most off the peg bike I have, a Ridgeback Velocity. I've put a fixed seat post on it (it was suspension) spd's and the rear wheel rim blew after 6000 miles, so its new, its had new pads chains and cassettes (SRAM). Everything else is as off the shelf: frame front wheel, tyres saddle grip, groupset,

It was OTP for about a month in May 2006 before it got new wheels and tyres. It got better wheels in May 2007. I kept it like that until March 2009 when I stripped it and upgraded brakes, front and rear mechs, crankset (to Ultra Torque which itself went from 34t to 36t inner), cables, stem, bars, ergos, and some fresh celeste bartape. I'm actually really happy with the stock saddle unlike others with the same bike.
A cross/winter bike is probably next which I'll build from parts of my own choosing.
The only bikes I see which I would buy OTP are the £2000+ jobs (choice also limited to Campag!). Below that, there always seem to be some shortcuts on components or saddle.
