Were you aware it had a very short shelf life once opened ?
I was just reading the storage details........once opened, refrigerate and use within 5 days :eek:.
We have been using this one for 18 months and kept it in a cupboard!!!
Well, we only use it to sprinkle on certain meals eg chilli.

Yes, absolutely. Buy a fresh bit and grate it as you go Dave - it's a completely different product and lasts very well, unlike its powdered offspring..

Also beware buying "Italian grated hard cheese", pale imitation of buying a block of the real stuff and grating / shaving it.

And if you can't swing for Parmesan, then buy Grana Padano - it's made in the exact same way, but outside of the region where it can be legally called Parmesan. Ergo it's a bit less spendy.

Isn't it often less matured though?
Not that i would necessarily bother about that.

Quite possibly re being a bit less mature than Parmesan if the "strength rating" on the labels of the Tesco own brand are anything to go by. But since I always have one open and one on standby, it's not really an issue. ;)

Pecorino & Reggiano are always in our fridge, just grate enough for the dish whilst cooking. Hard cheeses should last along time, at least until you used a small wedge.
