The first pancake is always an offering to the pancake God as it never works properly.
Why though... is it that we are so desperate for that first pancake that we don't wait till the pan is warm enough?

I had a theory my first pancake isn't so good because there's too much butter in the pan. No. You're probably right about the Pancake God needing an offering.

Just had a quick look. Sainsburys ( I expect waitrose sell it too) sell Betty Crocker 400g pancake mix, containing all sorts of goodness... Egg yolk powder, milk powder, palm fat, dextrose. Works out at £5 per kilo. Their basics range does a batter pudding mix for 39p. Makes 12 yorky puds, but probably half a dozen pancakes, but you add your own egg.

Cubette and I were the only ones partaking last night. Two very heaped tablespoons plain flour, pinch salt, one egg, 3 fl oz water, 3 fl oz milk. Made four good sized pancakes.
