Swap the kidney for a nice bit of liver......he won't know the difference until it's too late, and, it will teach him the lesson 'if anything is worth doing, don't rely on Dad'. In the meantime, slice up the liver into thumb size morsels, coat in seasoned flour then flash in the pan wth butter. A wee but if texture on the outsde, yummy and juicy on the inside. Serve with new boiled taters, fried onion and peas. Delish. Where is Patrick Stevens?

Here's a recipe that's worth trying. In fact this thread has rekindled my interest in kidney eating in a form that isn't pie related. I'll be using the recipe at the weekend - it's really tasty.

2pigs kidneys skinned and pithed with all fat removed
2 tsp soy oil
1/4 tsp ground cinnamon
salt and pepper
2 Cox's apples peeled cored quartered and sliced
4 spring onions trimed and sliced into 1 cm pieces
2 fl oz of Amontillado sherry or dry cider
1/4 pint of single cream

toast or toasted muffins to serve the kidney's on.

Slice the kidney into the thinnest possible slices - a sharp knife is essential
Heat the oil and fry the kidney over a brisk heat for three or four minutes.
Stir the kidney while frying and add the salt pepper and cinnamon at the end of the three minutes.
Lower the heat add the onions and apples and cook until softened.
Add the sherry and allow it to come to the boil then add the cream.
Stir to get a good mix.

Spoon onto the toast or muffins

Enjoy!

Thanks. Except I haven't got any Cox's apples. I haven't got any Amontillado sherry. I haven't got any single cream. Oh, and the kidneys are lambs', not pigs'
